Prepare the prepared vegetables: dice the peppers and onions, as well as the carrots, celery, chili peppers and mangoes, chop the garlic.
Heat the oil in a deep frying pan and fry the onions over medium heat, after 5 minutes, when they are soft, add the mango and all the spices, then the tomatoes, garlic and celery.

Braise for about 20 minutes until the vegetables are fully cooked.
