Roasted garlic potatoes are a delicious, quick side dish that will fill your home with the aroma of garlic and butter. The roasted garlic intensifies the sweetness of the potatoes, making them extra delicious. You can serve this dish as an accompaniment to dinner or as a meal itself. With only one type of potato and simple ingredients, these scrumptious side dishes are a must have at your dinner table tonight!
The first step is to prepare the oven, place a wire rack in the middle, and heat the oven to 400 ° F. After that line a baking sheet with aluminum foil.
Place 3 tablespoons unsalted butter in a large microwave-safe bowl. Microwave on HIGH in 10-second bursts, stirring between each burst, until the butter is fully melted, 30 to 40 seconds total. If you have an especially powerful microwave oven, you’ll need to reduce cooking time as needed.
Add the following ingredients to a bowl of melted butter: Cut 1.5 pounds of potatoes in half lengthways, finely chopped 3 cloves of garlic, 2 tablespoons of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Stir thoroughly making sure the potatoes are evenly coated. Transfer to a baking sheet.
In the final cooking step, fry the potatoes until they are golden brown, until the potatoes are soft enough to pierce easily with a fork, and begin to shrivel slightly, flipping halfway through, for only 30 minutes. While cooking the potatoes, chop finely 2 tablespoons of fresh parsley leaves. Taste and season the potatoes with salt and pepper if necessary. Decorate with parsley.
