What are potato pancakes? Potato pancakes are balls of mashed potatoes that are fried in oil. Now, that might not sound super appetizing to you, but they’re an incredibly delicious and filling meal to have as a breakfast or a dinner. I’ll show you how to make delicious & tender potato pancakes by giving you easy recipe. There are many variations to this dish as well as different ways to prepare it. They are so delicious.   • 1 Egg
  • 2 Cups Cold Mashed Potatoes
  • 1 Ounce Parmesan Cheese
  • 2 Tablespoons Olive Oil
  • 1/2 Cup Flour
  • 2 Tablespoons Chopped Fresh Chives


Step 1

Take a large bowl, then grate 30 grams Parmesan cheese (about 1/2 cup) and put it in a bowl. Chop 2 tablespoons of garlic and add to a large bowl as well. Take 1 egg and beat for 1 minute with a fork or wooden spoon. Then add 2 cups cold mashed potatoes and 1/4 cup flour and mix thoroughly. The next item is to cool the mixture in the refrigerator for 10 minutes.

Step 2

Take the remaining 1/4 cup flour and pour it into a shallow dish. Divide the resulting potato mixture into 8 servings. Form each portion into a cutlet with a diameter of about 3 inches, then roll the cutlet in flour on both sides, shaking off excess flour. We spread our ready-made cutlets on a baking sheet or a large plate.

Step 3

Heat 1 tablespoon olive oil in a large nonstick cast iron skillet over medium to high heat until shimmery. Tilt cast iron pan so that the oil completely covers the bottom. Using a wide, flat spatula, gently transfer 4 tortillas to the skillet and cook, inverting once, until golden brown and crisp, about 3-4 minutes on each side. Then we repeat the same with the remaining 1 tablespoon of oil and 4 cutlets.

Potato pancakes are made from grated potatoes and eggs and cooked on a hot skillet. Crisp on the outside, fluffy inside with a satisfying chew, they’re great for a quick breakfast/brunch or meal. Ideal partners: sour cream, applesauce, honey or jam.
