Peach wine is made from ripe peaches that have been gently crushed and placed in a fermentation vessel. 

The water is then added to the crushed peaches, along with pectic enzyme and yeast. Once the liquid starts fermenting it becomes wine which can then be transferred into an aging vessel for up.

Ingredients

  • 5 Lbs Sugar
  • 12 Lbs Fresh Peaches
  • 2 Cup Golden Raisins
  • Wine Yeast
  • 0.9 gal gallon Spring Water
  • 0.8 oz Acid Blend

INSTRUCTIONS

Step 1

Wipe the peaches with a dry cloth, there is no need to wash them. This method leaves wild yeast on the fruit and contributes to the better quality of the wine.

Step 2

Remove the pips from the peaches. The flesh of the fruit, the skin and the raisins crush and until smooth. Take a saucepan and put the prepared mixture in it.

Step 3

Add water and citric acid, stir and add half the sugar. Stir again and add the wine yeast.

Step 4

Cover with a clean cloth and put in a dark place for 3 days. The temperature should be room temperature.

Step 5

Stir every 24 hours with a clean spoon and don’t forget to submerge floating pieces of peel or pulp.

Step 6

When foam and a slight sour odor appears, strain through a sieve. Take a container for fermentation and pour into it the contents of the pot, but no more than 2/3 of the volume. Put a rubber glove on the neck and make a puncture. Leave the fermenting container in a dark place at 17-24°C.

Step 7

After 6 days, add the remaining portions of sugar, mix thoroughly and cover also with a rubber glove.

Step 8

After 60 days, pour the young wine into another clean container up to the top, so that there was no contact with the air. Carefully through a thin tube without touching the sediment at the bottom of the fermentation tank.

Step 9

Close tightly with a cork. Leave in a cool room at 6-15°C for 6 months.

Step 10

The shelf life of peach wine is up to 3 years. The strength is 10-12%.
