This is our favorite juiciest roasted chicken recipe in the oven. It is simple and very delicious – the chicken will come out of the oven tender and juicy. It’s a great dinnertime recipe that can easily be tailored to help use what you have in the kitchen. The trick, to keep the chicken from drying out as it bakes is to start the chicken at room temperature so it comes up to temperature before you put it into the oven.
The first step is to preheat your oven to 350 F (175 degrees C).
The next step is to season generously with pepper and salt inside and outside the carcass. Sprinkle inside and out with onion powder. Place 3 tablespoons margarine in the chicken cavity. Arrange dollops of the remaining margarine around the chicken’s exterior. Cut the celery into 3 or 4 pieces, and place in the chicken cavity. The skin will be crispy and golden brown.
Bake uncovered 1 hour and 15 minutes in the preheated oven, to a minimum internal temperature of 180 degrees F (82 degrees C). Remove from heat, and baste with melted margarine and drippings. Yay! The chicken is cooked! Now what? What do you do? I always just cover it in foil, set a timer for 30 minutes, and then take it out.
